Lead Brewer

Mikkeller Brewing is hiring a fulltime Lead Brewer.  Our ideal candidate has a deep passion for craft beer and the ability to represent the Mikkeller Brand and Mission.  At Mikkeller, we take pride in the collaborative process we have of making fun, exciting, and quality beers.  The Lead Brewer is key to aiding in coordinating ingredients, recipes, and processes across the manufacturing of craft beers.  The Lead Brewer will report directly to the Production Manager.

What you will do:

  • Abides by all company safety procedures and ensures fellow team members are also complying
  • In charge of maintaining cleanliness and order in the cellars
  • Practices good communication with team members and management
  • Leads in developing company Standard Operating Procedures (SOP’s)
  • Lead trainer of cellar staff and brewers
  • Ensures Clean In Place (CIP) operations of fermenting vessels, bright tank vessels, transfer pipework, other vessels, and Clean Out of Place (COP) operations of all brewing equipment and cellar floors are fulfilled and completed to SOP’s standards
  • Can prepare vessels and transfer lines for yeast harvests. Can train others in proper process
  • Perform yeast cell counts and understanding of needed volumes/strains for upcoming batches. Can train others in proper process
  • Organize and inventories materials for all brews and cellar actions. Main brewing material acquisitor
  • Under the Direction of Brewing Manager/ Production Manager; In charge of scheduling brews and cellaring tasks including mills, dry hops, adjuncting, etc. Main point of contact to any substitutions or changes needed to recipes or tasks
  • Proficient in production of wort to recipe on brew house, with knowledge to train others of correct process, procedures, and to make adjustments
  • Transfer beer from fermenter to brite tank successfully and with detail to quality and volume. Possesses knowledge to train others of correct process and procedures
  • Works to ensure proper supply of chemicals, enzymes, and other brewing aids to be used on production floor
  • Coordinates pick-up of spent grain and other materials
  • Perform daily fermentation/fermenter checks and make appropriate actions. Ensures actions have been completed when scheduled.
  • Conduct quality control and perform quality assurance activities to ensure product quality with and without the help of lab personnel
  • Operate forklift and assist with warehouse organizing and transportation of materials to brewery
  • Produce and assist with specialty projects including barrel racking/filling and use of sour parts/vessels
  • Perform routine maintenance on machines and vessels with/without assistance from maintenance personnel
  • Create and contribute ideas to future production beer recipes
  • Overviews recipes and ensures they are properly formatted to achieve success on brew house
  • Main point of contact for all cellar persons and brewers
  • Perform all other duties as assigned

Skills and experience required for this Position: 

  • 2+ years of experience in a brewer position at a production facility, with at least 6 months of being a lead trainer
  • Acceptance of varying and flexible schedules
  • QA/QC knowledge in but not limited to yeast cell counts, fermentation/carbonation/TPO readings, and taste approvals
  • Experience and expertise with using and problem-solving enterprise resource planning (ERP) software
  • Experience with material, brewing, and cellaring planning and scheduling
  • Must work well with team and independently
  • Treat others with dignity and respect
  • Be passionate about Mikkeller and the craft beer industry

Preferred Qualifications:

  • Completion of a brewing education program
  • Computer intelligent with use of excel, word, and other software programs

  • Establish and sustain meaningful relationships with Classic Beverage’s Management and field sales team to drive share of mind, superior trade execution and new sales opportunities

Director of Retail

Duties & Responsibilities:

  • This position will be a senior member of the leadership team and report directly to the General Manager. General responsibilities include, but are not limited to:
  • Directing retail strategy and planning
  • Preparing operational plans for each revenue division
  • Preparing retail reports and make recommendations to management on strategic direction for retail
  •  Scout new locations for retail when needed
  •  Develop pro forma P&Ls and case analysis for different retail scenarios
  •  Oversee, create, and revise all internal SOPs to ensure operational excellence at all locations
  •  Coordinate marketing efforts with each retail locations and the marketing team in San Diego
  •  Train all location level managers and supervisors
  • Maximize the profitability in each retail zone by adhering to prescribed KPIs

  • Wash kegs using a premier stainless keg washer
  • Assist in sensory analysis
  • Label cans and bottles.
  • Work with team to package 40bbl goal per shift

  • Assist Warehouse crew with organization and cleanliness.
  • Safely dispense and handle cleaning chemicals including proper use of PPE.
  • Uphold Mikkeller’s high standards of quality, safety, and cleanliness.
